Cauliflower Crust Pizza with Tomatoes and Spinach

Turn your go-to guilty pleasure into a healthier option by substituting traditional crust with a grain-free cauliflower crust. Once cooked, it is sturdy enough to pick up and eat just like regular pizza. It gets its flavor from eggs whites, Italian seasonings and a generous amount of cheese. Use this recipe as your own canvas to build with your favorite toppings.

Ingredients:

For cauliflower crust:

  • 1 head cauliflower, roughly chopped

  • 4 egg whites

  • 1/4 cup shredded low-moisture, part-skim mozzarella cheese

  • 1/4 cup reduced-fat Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon ground black pepper

Sauce & Toppings:

  • 1/2 cup no-salt-added tomato puree

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1/2 teaspoon garlic powder

  • 1 cup grape tomatoes, halved

  • 1/2 cup red onion, finely chopped

  • 1 1/2 cups baby spinach, roughly chopped

  • 2 teaspoons canola oil

  • 1/4 cup fresh basil leaves

  • 1/2 cup low-moisture, part-skim mozzarella cheese, shredded

  • Step 1

    Set oven to 450 degrees. Line two separate baking sheets with parchment paper and coat with cooking spray.

  • Step 2

    Add cauliflower to a food processor in batches to avoid overfilling the bowl. Pulse until the cauliflower resembles rice or couscous.

  • Step 3

    Measure out 4 cups of cauliflower and transfer to a medium bowl. Add egg whites, mozzarella, Parmesan, garlic powder and black pepper to the bowl. Stir to combine.

  • Step 4

    Divide mixture into two separate batches onto the prepared baking sheets. Shape each batch into 7-8” circles, using a knife or spatula. Bake for about 30 minutes or until crust is golden brown and firm.

  • Step 5

    While the crust bakes, combine the tomato puree and spices in a medium bowl. Set aside.

  • Step 6

    Reduce oven temperature to 425 degrees. Carefully spread tomato sauce evenly between both crusts. Top with basil, grape tomatoes, red onion, spinach and cheese.

  • Step 7

    Bake for 5-7 minutes or until cheese is melted.

  • Step 8

    Remove from oven. Top with Parmesan and crushed red pepper, if desired and serve.
